Carbon dioxide in effervescent wines: influence on descriptive analysis, discrimination and consumer liking
2008
National audience
Temporal dominance of sensations
2017
International audience; Sensory evaluation is a scientific discipline used to evoke, measure, analyse and interpret responses to products perceived through the senses of sight, smell, touch, taste and hearing. It is used to reveal insights into the way in which sensory properties drive consumer acceptance and behaviour, and to design products that best deliver what the consumer wants. It is also used at a more fundamental level to provide a wider understanding of the mechanisms involved in sensory perception and consumer behaviour. Sensory perception of products alters considerably during the course of consumption/use. Special techniques are used in product development to measure these chan…
IANUS - Comparative analysis - Appendix A: UST analysis
2002
UST dimension concerns data different from already analyzed data of ABA, ENQ, and ECO for their own nature: UST data are individual/subjective data while ABA, ENQ, and ECO are aggregate/objective data. So, the analysis criterion used for UST data will be different from that used previously. Our aim, in this section, is an evaluation of the users’ opinions on facilities through a descriptive analysis of our sample results.
Study of the effect of H2S, MeSH and DMS on the sensory profile of wine model solutions by Rate-All-That-Apply (RATA)
2016
The effect of hydrogen sulfide (HS), methanethiol (MeSH) and dimethyl sulfide (DMS) on the odor properties of three wine models-WM- (young white, young red and oaked red wines) was studied. Wine models were built by mixing a pool of common wine volatile and non-volatile compounds and further spiked with eight different combinations of the three sulfur compounds present at two levels (level 0: 0 μg L and level 1: 40 μg L of HS, 12 μg L of MeSH; 55 μg L of DMS). For each wine matrix eight WMs were produced and further submitted to sensory description by Rate-All-That-Apply (RATA) method. Hydrogen sulfide and methanethiol were clearly involved in the formation of reductive aromas and shared th…
A study on The Factors Affecting Merger and Acquisition Decision In Nepalese Banking Sector
2016
Master's thesis Business Administration BE501 - University of Agder 2016 The main purpose of this study is to find out the factors that would lead to making decision regarding going for merger and acquisition among the banks in Nepalese banking sector. This thesis finds out various factors that would affect merger and acquisition decision in banking sector based upon previous studies, and tries to check whether these are significant in case of Nepalese banking sector or not. Four theories: neo-classical, agency, behavioral and resource dependency; have been taken into consideration for purpose of finding out factors affecting decision to go for merger and acquisition. Based upon the previou…
Structural approach of social representation: Application to the concept of wine minerality in experts and consumers
2015
© 2015 Elsevier Ltd. In recent years the sensory evaluation field has been moving from the traditional sensory descriptive methodologies towards consumer based methodologies. Sensory descriptions are not confined to sensory evaluation. In everyday life, people use also descriptions to communicate about products sensory properties. The theory of social representation offers a new approach for studying the meaning of the terminology used in these everyday life descriptions. One implication of this theory is that meaning is created through a system of social negotiations rather than being a fixed and finite code. The goal of the present study was to understand the meaning of the concept of win…
Sensory testing in new product development: working with children
2015
Abstract This chapter aims at briefly reviewing applications of sensory descriptive testing methods with children, as well as their limits in relation to the cognitive development of children. Children’s sensory perceptions and preferences may differ from those of adults, which may make working directly with children a must for successful product development, at least at some stages of product development. However, most reported studies with children have characterized their preferences. Some studies have used discrimination tests and ranking tasks to gain knowledge about differences among products, or about sensory abilities development. A much smaller number of studies have involved child…
